Selected grapes from this single vineyard are destemmed then premaceration fermentation lasts 4-8 hours on the skins, it is then pressed using a pnuematic press. Fermentation using wild and cultured yeast commences in stainless steel tanks at 12-15°C lasting 40 days. The wine remains in contact with its lees for 6-12 weeks with fortnightly battonage before being filtered and bottled. Martin Tesch, a great rock music fan, believes that Riesling needs no amplfication; in common with all Tesch wines, this wine is not aged in oak.
